Graubünden is Switzerland's easternmost wine canton, gathering four distinct wine landscapes within its Alpine borders. Its focal point is the Bündner Herrschaft, a small limestone plateau in the upper Rhine valley sheltered beneath the Rätikon Alps, prized above all for Pinot Noir grown on limestone and marl soils often compared to Burgundy's Côte d'Or. Tradition credits its arrival to Henri II, Duke of Rohan, the French commander stationed here during the Thirty Years' War, though whether it was the Duke himself or his mercenaries who urged local growers to plant it remains debated. It has remained ever since, ripened by the Föhn wind that locals call the Traubenkocher, the grape cooker. Completer, one of the rarest white grapes in the Alps, survives on ten hectares around the village of Malans, first recorded in 1321 and still made by a handful of committed producers. Beyond the Bündner Herrschaft, the canton includes three smaller wine areas: Chur, around the cantonal capital; Poschiavo-Engadina, where vineyards appear only at the valley's southern, lower-altitude end around Brusio and Campascio, closely enough tied to neighbouring Valtellina that estates there have long grown Nebbiolo (locally Chiavennasca) on Italian soil before bringing the wine home to be cellared and bottled; and Mesolcina, an Italian-speaking enclave whose grapes are vinified across the border in Ticino.
